Ensalada de Nopal

Ingredients:

cactus
onions
garlic
lemon
cilantro
salt
tomato Buy a bag of cleaned and diced catus leaf. In a large pot combine the catus, salt onions and garlicc. Bring to a boil and allow to simmer until al diente. Drain and toss with other ingrediants when cold.

I have eaten cactus leaves mixed with scrambled eggs and served with meat dishes, so I am interested in trying it in a salad.

interesting, I may have to try this one. I would imagine it's high in fiber too.

You wouldn't even know it was a cactus. The first time I tasted it I didn't know it was. I asked how the dish was made and that was when I found out. You would think it is another vegetable.
