It was really hard to pick which recipe was the best from last week's class at Apron's Cooking School. This recipe makes a delicious vegetarian entree or side dish. The positive news is that social responsibility is on the upswing! Even in tough economic times people are choosing to buy fair trade coffee, sustainable products, organic food and volunteering in their communities. According the today's Herald Tribune, the number of cases of swine flu in our area have increased significantly in the last few weeks. Last year at this time, fewer than 1% of emergency room visits were flu related. Last week the flu related emergercy room visits accounted for 10%.

Green is here for a while. The latest is a push for green packaging headed by guess who? You got it! Walmart. If you didn't know this Walmart is going green mostly because it is smart business.
