I am a Licensed Mental Health Counselor in private practice. I provide individual and couples therapy to adults with a wide range of life issues. My specialty is relationships. I am a Master Certified Relational Life Therapist. This model of therapy is based on the work of best-selling author, Terry Real whom I have trained and worked with for the past 6 years. I am a coach and faculty member of Real's Relational Life Institute and coach therapists around the country as part of their training. I am also affiliated with the Relationship Gym as a Relationship Coach, coaching both singles and couples by phone. And last, but definitely not least, I am a staff writer and copy editor for WQ Mag. While you are at the Aprons school, I wonder if you could find out what has happened to cheese. I used to be able to make a smooth cheese sauce or cheese soup merely by melting cheese in a stock or milk base. Lately, however, the cheese only partially melts, but leaves a residue of small, curdy lumps in the bottom of the sauce or soup. I thought maybe I had simply lost my technique, but I have asked others who say they have noticed the same thing with cheese lately. Has the cheese industry changed the way that cheese is made? How can we get a smooth cheese sauce with this uncooperative cheese?
