RECIPE OF THE WEEK: 5-Minute Individual Potato Gratins

I always associate Easter with potatoes au gratin. This recipe from Food Network's Melissa d'Arabian is so simple it's good on any day of the year. Made in a muffin pan, the recipe quickly serves up individual gratins.



Ingredients;

Vegetable spray

2 large russet potatoes, roughly peeled and thinly sliced

1/2 cup grated Swiss cheese

2 green onions, finely chopped

Salt and freshly ground black pepper

3/4 cup heavy cream
